A commercial blast freezer pulls hot food through the danger zone fast, chilling from +75C to +3C in 90 minutes and freezing from +75C to -18C in 240 minutes. That speed locks in texture and moisture and keeps you inside HACCP cooling curves, which a standard fridge or freezer can't do without leaving food too long in the bacterial growth range. It's core kit for restaurants, catering, and food production that batch-cook and store, or run cook-chill service.
