A vending machine is a shop that fits in a square meter. It holds the stock, takes the payment and hands over the product on its own, so an automated retail machine can open a sales point where a staffed counter would never pay for itself: a gym at six in the morning, an office corridor at midnight, a hotel lobby on a quiet Sunday. The trade calls it unattended retail; the guest just calls it the machine that's open.
It is also the smallest way into retail we sell. Four steps, and only two of them involve you.
Pick the site and plug it in. A standard machine wants a 220 V socket, about a square meter of floor and an agreement with whoever owns the pitch — a flat fee, a share of sales, or nothing at all when the site wants the service for its own people.
Fill it with stock. Most machines hold three to seven days of product; refrigerated models keep it at temperature, and cook-and-serve models heat or bake each portion to order rather than storing it hot.
The touchscreen vending machine takes a card, a phone or a QR code and dispenses on its own. Cash is optional: a cashless vending machine with a card reader takes a higher average sale and leaves you nothing to count or carry.

The machine is the easy part. Nearly every disappointing payback starts as a pitch problem: not enough people, the wrong people, or the right people in too much of a hurry.
Stand at the spot in its busiest hour and count who actually passes. Impulse buying converts something like one to three people in a hundred, so a site that moves 200 people a day is a two-to-six-sale pitch. Read that against the tables below before you sign.
A hurrying crowd buys less than a waiting one. A concourse where people run for a gate can lose to a break room, a clinic waiting area or a lobby queue, where somebody has ten idle minutes and nothing to do with them.
The audience picks the product, not you. Protein where people train, hot food where the shift changes, ice cream where people stroll. A wine machine in a gym lobby gets admired and never used — and alcohol needs the site to allow it at all.

Every table below is arithmetic on four numbers: what the guest pays, what one serving costs you, the card fee, and what the site costs you per month. We use prices from a mid-size European city, 30 days a month, VAT excluded, and assume you restock the machine yourself. Change any input and the payback moves — which is the reason the inputs are on the page instead of a finished number.
Volumes are named for what they are. Quiet is a machine in an average corridor, Busy is a good pitch with real footfall. Nobody can promise you which one you'll get, and a vending machine payback quoted without the volume behind it is a sales pitch, not a calculation.

Cashless is worth insisting on: it lifts the average sale, removes the cash run, and a machine with a card reader is accepted in sites that will not allow a cash box on their floor.
The outdoor models can: a sealed weather-rated cabinet, heating or cooling sized to the climate, and a screen you can read in daylight. The pizza machine on this page is built for exactly that — a 24/7 street front.
An indoor machine moved outside fails in the first winter, so check the model rather than the category. Each product page states which it is.
For snacks and packaged drinks, usually no licence — but food businesses register with the local authority in most of Europe, and a fresh food vending machine, anything unpackaged, chilled or heated, falls under the same hygiene rules as a kitchen.
Alcohol is the exception everywhere: unattended sale needs both a licence and verified age checking, and several countries do not permit it at all. Confirm your own country's rule before you order the machine, not after.
You do the day-to-day: restocking, wiping down and the cleaning cycle the machine runs itself. On most models that is under an hour a week per machine, and cloud-managed units tell you when it's needed instead of you guessing.
