Right out of the box, this knife felt different — in a good way. There's a satisfying heft, and it just glides through ingredients. The beech handle is wonderfully smooth and ergonomic. Definitely feels like a luxury tool at a great value.

As a sushi chef, I need precision and quality, and this knife delivers. The layered steel gives it great resilience and maintains sharpness really well. Just wish it came with a protective sheath — that’s the only reason I’m giving 4 stars.
