Really happy with this purchase. It’s lightweight but doesn’t feel cheap. We use it mostly for prep work at our gastropub, and it's been a dream with both veggies and meats. Not hard to maintain either!

We bought several of these for our hotel restaurant kitchen, and the chefs are thrilled. The 7cr17mov steel really resists rust, which is huge in a fast-paced setup. My only small gripe is the blade came with a lot of factory oil, but that’s expected and manageable. Overall excellent performance.

This knife slices better than anything else we’ve tried at our cafe. The brass fittings and rosewood handle really make it feel luxe. My only minor issue was that one of the handles arrived slightly lighter in color than pictured. Still, performance-wise it’s incredible.
