Nice weight, excellent edge, and gorgeous handle finish. We use this knife every day in our hotel kitchen, mostly for poultry and fish. The high tip angle makes it super precise for deboning thighs. Haven’t needed to sharpen yet, which is saying a lot in a busy kitchen. 10/10.

It's well balanced, feels great in the hand, and the 13.1cm blade is just right for portioning proteins. I especially love the chicken wing wood handle—it looks as good as it performs. We’ve had chefs and even guests compliment it when they see it on the prep table!

Been using this boning knife for about a month now and it performs great. The blade is stiff but responsive, perfect for tighter trimming jobs. It slices through ribeye fat caps like butter. My only small concern is that the wood of the handle gets a bit slippery if your hand is wet — would love a slightly more textured grip. Still, definitely a strong addition to our prep line.

I run a small BBQ joint in Tennessee, and we've gone through our fair share of boning knives. This one stands out for sure. The 5Cr15 steel blade is sharp right out the box and keeps its edge well, even after breaking down a dozen pork shoulders. The chicken wing wood handle gives it a really solid feel, and it's surprisingly lightweight and easy to maneuver at 152g. Absolutely a great addition to our kitchen tools!
